Orange Chicken Nuggets
Hello readers! Country Fox has been busy the last couple months. After all, one’s house and yard don’t just re-side and landscape themselves. I had to take slight break from blogging since nearly every spare moment has been spent painting, siding, building, digging, etc!
However, as the major parts of our construction start to wrap up, I should be able to devote more time to bringing fresh content. This weeks post is all about one of our favorite recipes.
Ingredients: Makes 4 Servings
Chicken Nuggets:
- 1 pound Ground Chicken
- 2 cups Carrots shredded
- 1/2 cup Onion, finely diced
- 2 TBSP Coconut Oil, melted
- 2 TPSP Coconut Flour
- 1/2 tsp Sea Salt
- 1/2 tsp Black Pepper
- 2 tsp Orange Zest
Sauce
- 1/4 cup Coconut Aminos (can use Soy Sauce)
- 1 TBSP Fish Sauce
- 1 tsp Orange Zest
- 2 tsp Apple Cider Vinegar
- Juice of 1 Orange
- 2 tsp Honey
- 1 tsp Onion Powder
Directions:
- Preheat oven to 400 degrees Farhenheit. You can either grease a baking sheet or cover it with aluminum foil.
- Combine your ground chicken, grated carrots and diced onion.
- Next, add melted coconut oil, coconut flour, sea salt, pepper, and orange zest. Mix well.
- Once mixed well, roll into small slightly flat poppers. They should be about 1 inch in diameter. At this size you should end up with 20 to 24 nuggets. Place onto prepared baking sheets.
- Bake the nuggets 25 to 28 minutes. Flip them halfway through their baking time.
- While the nuggets are baking, make the sauce. Start by combining all the ingredients in a small sauce pan.
- Whisk ingredients. Heat to a low/medium heat for at least 5 minutes. Stir periodically.
- When nuggets are done, remove from oven. Brush the nuggets with the sauce and save some for dipping.
Orange Chicken Nuggets
The nuggets are a great meal. They have a slight orange taste to them. We usually make veggies and a salad to go with our nuggets.
If you are not sure where to find Fish Sauce, check your local grocery store. I know my local Walmart and Giant Eagle both carry Fish Sauce. If all else fails, there is always Amazon. Fish sauce helps to create umami in the recipe. Umami is one of the five basic tastes. It is described as savory.
